Lemon Delicious Pudding

3 eggs
¾ cup sugar
1 ½ cups milk
2 ½ tbs SR flour
1 tbs finely grated lemon rind
1 cup fresh lemon juice
1 tbs extra sugar


Separate eggs
Beat eggs and sugar together until light and cream.
Add milk, lemon juice, rind and fold into sifted flour.
In a clean bowl, beat egg whites until soft peaks form
Add extra sugar to egg whites and beat until dissolve.
Fold into lemon mix and pour into greased casserole dish
Stand dish in shallow pan of cold water them bake in moderate oven for 50-60 mins (180 degrees)
Serve warm with cream or ice cream
