1 can Guinness
1 cup mollasses
1 cup golden syrup
1 tsp baking powder
6 eggs
2 cups brown sugar
2 cups sugar
1/1/2 cups veg oil
4 cups flour
2 tbls ground ginger
1 tsp cinnamon
½ tsp ground all spice
½ tsp ground nutmeg
Method:
1. Heat beer, golden sryup, mollasses until just warm
Add baking powder and cool to room temp
2. Beat eggs & both sugars together, add oil gradually
3. Add sugar mixture to cooled beer mixture
4. Sift dry ingredients - Add wet mix to dry and stir to combine - don't over stir
5. Spread mix into large lamington tin
6. Cook at 180degrees for 45mins or until skewer comes out clean
Serve with ice cream and maple syrup
